IT’S DISTINCTLY PASO. 
 
There is a very specific type of satisfaction that one has when it comes to pride in one’s children. It’s a faraway look of fulfillment, perhaps a bit restrained in its desire to be humble. In the case of Copia’s Willow Creek Estate, our children are 38,300 vines, raised to meet the world in 2021. You just can’t help letting a bit of that unadulterated joy escape out into the world. You know that what you helped to create is something so very special. First crops are like first children: They represent new beginnings, hopes, and dreams.
 
The pure happiness that arises from being able to present wines crafted from our inaugural estate harvest is boundless. It was an impressive season culminating with the first fruit being picked on September 8, 2021. This is the very land where infant vines were placed in the ground by our Sahi Family elders and it is the land that feeds this passion to make singular wines of site. The previous years of tireless work in developing this special vineyard showed in fruit quality. Berries were small and concentrated, while overall yields were tapered. 2021 is a vintage for the books for Copia. Just over two weeks ago, we received our highest overall critical ratings to date.
 
As with all wines, we can draw comparisons to our predecessors – the great winemakers of great wine regions of the world steeped in rich history and tradition. With the first reviews on these wines, the critic Jeb Dunnuck certainly paid us the ultimate compliment for 2021 The Story Grenache: “It will compete with some of the top Chateauneuf du Papes out there.” But, what really strikes us is the reason why we chose to take root here above any other place. Paso Robles is where we call home. Paso has the largest calcareous-based soil formation and the largest diurnal temperature change in all of California, contributing to amazing concentration in our fruit and ability to retain acidity. These factors are only part of the reason we’re here. But the true factor that makes this wine special is the beautiful community of people that have lifted us up and supported us throughout our journey. Winemakers, team members, restaurateurs, friends, and most importantly, you, our members. This is what makes the wine that you enjoy distinctly Paso Robles.

3. Select "Club List" then "Edit Club".
4. Here, you'll be able to make changes to your billing information, delivery preferences, and importantly, customize your shipment! If you opt to not login, you will receive our winemaker's selection, detailed below.
5. Be sure to click "Submit" to save your customization and changes.
6. The hard work is done! Pour yourself a glass of wine. You deserve it.

OCT 2: WINE SELECTION CLOSES. This is the last day to make any changes to your account, including; wine selection, billing information, shipping address, preferences or shipping date. 
 
OCT 3: YOUR ORDER WILL PROCESS. The card we have on file will be charged.
 
SHIP-TO MEMBERS ONLY | OCT 23: YOUR ORDER WILL SHIP (weather and temperature permitting). By default we ship via UPS Ground. If you prefer GSO or Fedex, please email before Oct 2 and let us know. Copia is not responsible for any additional charges incurred during shipping, including; redirects, address changes or returned shipments. These additional costs will be charged to your card on file.
 
PICK-UP MEMBERS ONLY | OCT 30: YOUR WINE WILL BE AVAILABLE IN THE TASTING ROOM. You will not be able to make substitutions at the time you pick up your order, please make sure your order is customized by October 2nd. If you are attending our pick-up party or brunch on October 28 and October 29 and have your preferences set to "pick-up," we will have your wine ready for pick-up at the events! Please note, if your preferences are set to ship, and you are attending the party too, you need to update your account to pick-up. If you can't join us, your wine will be at the tasting room and be available for pick-up starting October 30 through the end of January 2024. All shipments that are not picked up after January 2024 will be shipped out to your address on file (shipping charges will apply).

At Copia, just as the 2022 harvest frenzy heightened, we put our nose to the grindstone to find and develop a new winemaking home! Enter Copia’s Adelaida District Estate located at 5076 Mustard Creek Road in Paso Robles.

Anita, Varinder and the entire team at Copia have been working hard to create a lux oasis for you to enjoy. As we continue the work of developing the outdoor areas and vineyard, we are ready to welcome you for wine tasting experiences! Our signature wine flight of premium wines is paired with a curated collection of artisanal cheeses and charcuterie. To start, we have availability on Thursday-Sunday with plans to add-on more days and more experiences in summer.

It's Heating Up!

It felt like winter hung on extra long this year, bringing us the most beautiful spring. We saw bud break on the vineyard a few weeks later than in 2022. As the rains promised, our hills are covered in carpets of wildflowers, so much so that it’s viewable from space!

Daytime temps are going to be rising very soon and things are heating up at Copia, in more ways than one. Ready or not, the warmer temperatures of summer are soon to be here.  To protect wine quality, all states will be on a weather-hold beginning May 9th, until temperatures begin to drop again in Fall. Any orders placed after this date will be held in our temperature controlled warehouse. If we see a dip in temperatures, we’ll reach out and get your Copia wines on the way sooner. Stock up on your favorites now!

New Nectar on The Block!

Although the recent snow storms make it feel otherwise, winter is almost in the rearview here in Paso Robles! Spring has been patiently waiting to warm us all up. The honey bees have emerged from their hives as the almond trees blossom, providing the very first nectar of the new growing season. Wildflowers will be up next, dotting our vibrant green hills with hues of yellow, orange, blue and purple. Their sweet song will call the hummingbirds and orioles, and soon our hills will be full of birdsong and buzzing bees.
 
It’s the perfect time to introduce a wine to you that we have been working on for the better part of two years. From the moment we walked the vineyard back in the spring and summer of 2021, we knew that this chardonnay was special. It was going to be a bridge between the new and old world and it was exciting. Without further ado, we introduce to you our newest member of the Copia line-up: Amrit.
 
Amrit is a sanskrit word that means "immortality.” In ancient Indian texts, it is synonymous with elixir, ambrosia or a divine nectar. Hailing from the iconic Bien Nacido Vineyard, Amrit is a boundary-breaking wine that lands somewhere in between a Chablis and a California chardonnay.
 
The seasons come and they go, but we are so very fortunate to be able to bottle them away to enjoy and to remember. The glass is brimming with orange blossom, lemon curd, pink pearl apple and flint and the palate is full of vibrant, mouthwatering acidity. Usher in spring with this beautiful Bien Nacido chardonnay. You’ll want to add it to your cellar while it is still available!

Varinder's First True Love: Syrah

This month, love is in the air. After all, Valentine’s Day and National Syrah Day are just around the corner!

If you’ve been following us, you’ll remember the tale of Anita and Varinder’s first date. It’s our favorite story to share, especially around this time of year. 

Today, we’re rewinding to a time before that fateful first date in 2015. We’re going way back to talk about Varinder’s first true love: SYRAH.

Bold, sexy, dramatic, full-bodied, spicy. It’s all the things one could hope for in a first love. 

For Copia, Syrah is much more than a varietal. It is a calling. For Varinder, a twin-sign Gemini through and through, Syrah’s dichotemy, it’s dual nature, is what makes it a muse for him. It’s a wine that punches with power and spicy boldness, and flirts with fruit and florality all at once. This is the varietal that spoke to Anita and Varinder when they first visited Paso Robles Wine Country in 2015. It’s the varietal that continues to be the source of their inspiration, particularly in our flagship wine, The Source. Their love of Syrah inspired them to seek out the best vineyards to produce a collection of singular 100% Syrah wines. Learn more.

MORE ON SYRAH
Originating in the Rhone Valley of France, Syrah brings with it a rich, sometimes meaty expression. It is the most widely planted varietal in Australia where they call it Shiraz. Here in Paso Robles, Syrah has been crowned the king, and for good reason. The calcareous soil types in Paso Robles are rare in the rest of California — especially the limestone containing ancient seabeds found in our own Willow Creek and Adelaida Estates. While the soil stresses the vines (in a good way), the breeze off of the Pacific Ocean work to moderate our daytime heat. Cool mornings and nights (diurnal temperature shift) allow for the grapes to hang onto their acidity and aromatics. Our long growing season coupled with all of these growing conditions make for some of the finest examples of Syrah in the world. We feel lucky and proud to be stewards of a land that can reflect such a unique sense of place for our Syrah.

Syrah’s broody black color in the glass only foreshadows all of its complexity and nuance.

THE CHARACTERISTICS OF SYRAH

FRUIT
“Black and blue.” Juicy blackberry and blueberry aroma on the nose.

FLORAL AND HERB
Herbes de Provence (fennel, lavender, thyme), violet.

SAVORY, SPICE AND MORE
Black olive, peppercorn (green and black), clove, bacon fat, chocolate, smoke, tobacco.

TEXTURE
One of the most full-bodied red wines in the world, it coats the palate and has a beautiful silky mouthfeel.

FOOD PAIRING
Syrah pairs well with bold foods like grilled lamb chops, goat curry, game meat and prawn paella, a peppery barbeque or a cheeseburger. Try pairing it with dishes that contain Herbes de Provence, or aged cheeses like a 5-year Gouda.

Copia's Love Affair with Cheese

If you’ve visited us and experienced our lounge tasting, you’ll know we love to experience our wine with artisanal cheese. Cheese is incredibly delicious and enjoyable on its own, of course. But, there is a reason that wine and cheese are a match made in heaven.
 
Let's talk tannins! Tannins are an astringent compound abundantly found in nature. When it comes to wine, tannins are extracted from grape skins, seeds, stems and oak barrels. Think texture, structure and mouthfeel. Have you ever had the sensation of a the moisture leaving your palate after enjoying wine? That is the tannin in the wine.
 
What does this have to do with cheese? Cheese is composed of protein and fat and is rich on the palate. There is an interaction that happens when you combine wine tannins and the fat in cheese. A bite of cheese before a sip of wine smooths out the "rough edges" of some wine tannins. The perception of astringency in wine is reduced as it glides like silk over the palate. Studies have also shown that certain cheeses with certain wines can work to enhance fruit qualities and aromas.
 
At Copia, we take time as a team sampling several cheeses with each wine before presenting them to you. It’s a hard job, but someone has to do it! Our goal is to always find a cheese match that doesn’t change or overpower the wine. We look for a pairing that puts the wine on a pedestal and simply lets it shine.
