Tasting Notes
In this year’s white blend, different vessel types were employed throughout fermentation and aging. The Roussanne and viognier mostly saw amphora and oak to create a delicate texture. A portion of Roussanne and viognier was co-fermented for an added layer of complexity. Picpoul Blanc was fermented and aged in stainless steel to preserve its freshness. What results is an opulent and aromatic white with notes of white peach, honeysuckle, lemon curd and minerality.
Winemaking
Varietals were handpicked on October 8th and 16th and gently whole cluster pressed. After cold settling, the wine was fermented at cool temperatures in French oak and Amphora. Partial malolactic fermentation was slow and steady. Batonnage was performed throughout primary and secondary fermentation. This wine is aged on the lees for 7 months in 47% neutral French oak, 30% Amphora, 23% new French oak.
