Tasting Notes
This Southern Rhône-style blend is a marriage of vibrant aromatics and wet stone minerality. Viognier is abundantly perfumed and Roussanne, with all its richness, provides the backbone. Crafted with a balance of texture, aroma and acidity, the 2021 Copia Vineyards White has mouth-watering hints of nectarines, lemon custard and white flower. A prominent note of savory salinity makes this wine perfect to pair with soft, creamy cheeses, rich poultry stews and spiced Thai and Indian cuisines.
Winemaking
Varietals were handpicked in September and October and gently whole cluster pressed. After cold settling, the wine was fermented at cool temperatures in French oak. Malolactic fermentation was slow and steady. Batonnage was performed daily throughout primary and secondary fermentation. This wine is aged on the lees for 9 months in a combination of neutral and 25% new French oak.
