Tasting Notes

2021’s Copia Cabernet Sauvignon is a departure from previous vintages. A true blend of Bordeaux varietals, the supporting cast for Cab consists of Merlot and Petit Verdot. The result is a beautifully structured and concentrated wine of depth and nuance. There is an elegance in the marriage of black fruit, graphite, herbs and refined tannins. This beauty should drink well for a decade plus.

 
Winemaking

Grapes were carefully berry and cluster sorted, 100% destemmed and fermented in stainless steel. Single lot of Copia Vineyards Cabernet Sauvignon and Petit Verdot were cofermented. After a cold maceration of 5 days, daily punch-downs, pump-overs and pneumotage were conducted.

 
Élevage

The wine rested for 20 months in 75% new French oak.

96 pts – Lisa Perrotti-Brown, The Wine Independent | Deep garnet-purple in color, the 2021 Cabernet Sauvignon has fragrant blackcurrant jelly, plum preserves, and bay leaves scents, giving way to nuances of pencil shavings and black olives. The medium to full-bodied palate has beautiful structure with ripe grainy tannins and a lively line, finishing on a lingering minerally note.

95 pts – Wine Enthusiast | Intense, inky and fruity all at once, this bottling pairs iodine, blackberry jam and mahogany aromas on the serious but approachable nose. The palate lands softly with creamy coffee-cake and caramel flavors that grow more savory toward the finish, which is full of graphite and dark woodspice.

94+ pts – Jeb Dunnuck | Cassis, spring flowers, iron, sage, and lead pencil notes all emerge from the 2021 Cabernet Sauvignon, a beautifully concentrated, textured, full-bodied Cabernet that has fine tannins, a beautifully balanced, elegant mouthfeel, and a great finish.
