Tasting Notes
2020's Copia Cabernet Sauvignon continues to take a walk on the wild side with 22% Syrah rounding out the blend. Aromas of cassis mingle with dark chocolate, licorice, graphite and bay leaf. Textured, opulent and with an extended finish, this wine has already seen a year of bottle age. It will continue to develop its complex expression for years to come.
Winemaking
Grapes were carefully cluster sorted, 100% destemmed and fermented in stainless steel. After a cold maceration, daily punch-downs, pump-overs and pneumotage were conducted.
Ratings
98 pts - The Somm Journal | "...this wine raises the bar for Cabernet. It possesses impeccable balance with a generous array of purple and blue fruit, while its seductively exquisite texture reveals a shadow of chalkiness and toasted oak."
94+ pts - Jeb Dunnuck | “Powerful, concentrated, and full-bodied, it has good mid-palate depth, ripe, building tannins, and a great finish. Paso Robles continues to produce more and more incredible Bordeaux blends, and this is top-notch.”
94 pts - Owen Bargreen | "...Sturdy and rich, the black tea and exotic spice notes add to the intrigue alongside heady dark fruits and refined tennis. No reason to cellar this great new wine. Drink 2024-2032."
93 pts - Vinous | “...seamlessly silky and refined ... finishes dramatically long yet still remarkably fresh.”
