Tasting Notes
2019’s Cabernet Sauvignon aged for an extra year in the bottle before release. It’s been an exercise in patience and is well worth the wait. The glass is brimming with aromas of tobacco, baking spices, cassis, bay leaf and just a hint of the pyrazine quality that is so beloved in fine Bordeaux wines. Spiced red cherry, and an intense blackcurrant note glide over the palate. It’s a full-bodied, round and concentrated wine with polished tannins.
Winemaking
Varietals were handpicked on October 5, 2019 at the peak of flavor ripeness and phenolic maturity. Grapes were carefully cluster sorted, 100% destemmed and fermented in stainless steel. After a cold maceration, daily punch-downs, pump-overs and pneumotage were conducted.

Focused fresh aromas of blackberry jam and hot morning buns invite the nose into this bottling. The palate is very elegantly presented, with marble-like tannins that are firm yet polished and a persistent but not overbearing acidity that deliver roasted black cherry and comforting baking spice flavors. - Matt Kettmann
